Mud Pie



Leslie this is the other recipe I was talking about. We serve this a lot for yw/ym, it makes a 9x13 pan.

1 pkg oreos
1/4 C butter or margarine melted
1 1/2 gallons vanilla ice cream ( You can use any flavor you like. You can even layer two flavors on top of each other)
1 jar hot fudge topping
1 12 oz. cool whip

Crush oreos. Set aside 1/2 C. of crushed oreos. Add butter to
remaining oreos and make a crust in the bottom of a 9x13 pan.
Layer ice cream, fudge and cool whip on top of crust.
Sprinkle 1/2 C. crushed oreos on top. Freeze

Pumpkin Waffles


This is a recipe I got from Amy Knight it is such a yummy recipe! My girls love these waffles, they look forward to fall so they can have them. If you haven't tried this recipe it is a must....you wont regret it!!!

1) Combine:
2 C. flour
2 TB. baking powder
1 TB. sugar
1/2 tsp. nutmeg
1/4 tsp. salt

2)Separate:
4 eggs
set whites aside
beat yokes slightly
add:
1 1/2 C. milk
1 C. pumpkin
3/4 C margarine (you can use butter)
1 TB. vanilla
Combine and add flour mixture

Beat 4 egg whites to stiff peaks
fold into pumpkin mixture

Syrup

1 cube butter
1 C. sugar
1/2 C. buttermilk
1 tsp. karo

Bring to a boil in a large pan. Stir in 1 tsp vanilla. Let stand

Cinnamon Rolls




1 TB. yeast ( I use SAF yeast)
1 C. warm milk
1/2 C. sugar
Dissolve and let sit for 5 min.

Add:
1/3 C. melted butter
1 tsp. salt
2 eggs
Mix well and add:
4 C. flour
knead dough into a ball
let rise in a warm place for 1 hour
roll out into a rectangle 1/4 inch thick
pre heat oven to 350`

Combine:
1 C. brown sugar
2 1/2 TB. cinnamon
1/3 C. softened butter
Spread over dough/sprinkle extra
brown sugar and cinnamon.
Roll up dough into long piece,
cut dough into 1 1/2 in thick rolls
Put into greased pan. Bake 15 to 20 min.
I sometimes add left over mashed potato's
about 1 C.

Frost with frosting...

Frosting:
1/2 bag powdered sugar
1 cube butter
2 TB. milk
1 tsp. vanilla
dash of salt

Chicken noodle soup




8 C. broth
1 C. celery
1 C. carrots
1/2 C. onions
2 C. chicken pieces
1 C. milk

Add:
1/2 C. milk
1/4 C. flour
2 TB. butter

Add spices to taste, salt, pepper, garlic, onion salt.
Cook until vegies are crispy yet tender & chicken is
done. Add 16 oz. grandmas noodles and cook until
done. (About 20 min or so) You might have to add
a bit more water depending on how you like it.
I have also used thin spaghetti noodles broken into
small pieces. I also add more vegies and chicken

Apple Crisp




4 C. sliced apples
1/2 C. sugar
1 TB. flour
1/2 C. oatmeal
1/2 tsp. salt
1/2 C. butter
3/4 C. brown sugar
3/4 C. flour
1/4 tsp. soda

Combine first three ing. and place in greased baking
dish (8x8). Combine remaining 6 ing. and sprinkle over
the top of apple mixture. Bake 30 min. at 350'.
Serve warm with vanilla ice cream.

Crockpot Chicken Enchiladas




3 to 4 lbs. Chicken (cooked and shredded)
1 Med. Onion (minced)
1 TB. Oil
2 Cans cream of chicken soup
1 C. Sour cream
10 oz. Can green enchilada sauce
4.5 oz Can green chillies
20 Corn tortillas
3 c. Cheddar cheese

Cook chicken & shred.
Combine in a bowl soup, onion,
sour cream, green enchilada sauce, & green chillies.
Tear enchiladas into bite size pieces.
In crock-pot layer sauce, chicken, tortillas, & cheese.
Alternate layers and end with sauce & cheese.
Cover; cook 5 to 6 hrs on high or 2 to 3 hrs on low

I have found these don't need to cook as long. Watch
them so they don't burn!
This has become our favorite chicken enchilada recipe!

Rich Zucchini Bread




3 eggs
1 c. oil
2 1/2 c. sugar
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp soda
1/4 tsp. baking powder
2 tsp. cinnamon
2 c. grated zucchini (unpeeled & raw)
1 c. chopped nuts (optional)

Combine eggs, oil, sugar, and vanilla and beat throughly.
Sift dry ing. and blend well. Stir in zucchini and nuts.
Bake in two loaf pans or a bunt pan. Bake at 325' for 60 to 70 minutes
or until toothpick tests clean. cool and drizzle with lemon icing if desired

Lemon Icing:

Blend together: 1 tsp. melted butter, 1 tsp. milk,
1 tsp. lemon juice and 1 c. powdered sugar.
