Rich Zucchini Bread




3 eggs
1 c. oil
2 1/2 c. sugar
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp soda
1/4 tsp. baking powder
2 tsp. cinnamon
2 c. grated zucchini (unpeeled & raw)
1 c. chopped nuts (optional)

Combine eggs, oil, sugar, and vanilla and beat throughly.
Sift dry ing. and blend well. Stir in zucchini and nuts.
Bake in two loaf pans or a bunt pan. Bake at 325' for 60 to 70 minutes
or until toothpick tests clean. cool and drizzle with lemon icing if desired

Lemon Icing:

Blend together: 1 tsp. melted butter, 1 tsp. milk,
1 tsp. lemon juice and 1 c. powdered sugar.

I'm making this on Sunday....mmmmm and it doesn't look too hard. I always thought zucchini bread was a huge ordeal.
