Crockpot Chicken Enchiladas




3 to 4 lbs. Chicken (cooked and shredded)
1 Med. Onion (minced)
1 TB. Oil
2 Cans cream of chicken soup
1 C. Sour cream
10 oz. Can green enchilada sauce
4.5 oz Can green chillies
20 Corn tortillas
3 c. Cheddar cheese

Cook chicken & shred.
Combine in a bowl soup, onion,
sour cream, green enchilada sauce, & green chillies.
Tear enchiladas into bite size pieces.
In crock-pot layer sauce, chicken, tortillas, & cheese.
Alternate layers and end with sauce & cheese.
Cover; cook 5 to 6 hrs on high or 2 to 3 hrs on low

I have found these don't need to cook as long. Watch
them so they don't burn!
This has become our favorite chicken enchilada recipe!

Rich Zucchini Bread




3 eggs
1 c. oil
2 1/2 c. sugar
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp soda
1/4 tsp. baking powder
2 tsp. cinnamon
2 c. grated zucchini (unpeeled & raw)
1 c. chopped nuts (optional)

Combine eggs, oil, sugar, and vanilla and beat throughly.
Sift dry ing. and blend well. Stir in zucchini and nuts.
Bake in two loaf pans or a bunt pan. Bake at 325' for 60 to 70 minutes
or until toothpick tests clean. cool and drizzle with lemon icing if desired

Lemon Icing:

Blend together: 1 tsp. melted butter, 1 tsp. milk,
1 tsp. lemon juice and 1 c. powdered sugar.

Cream Of Potato Soup



This is a tradition on Halloween. It is super yummy with cheese rolls

12 chicken bouillon cubes
1 heaping TB. parsley flakes
2 large carrots grated
1 qt. half and half (I use fat free half and half)
1 1/2 C. flour
3 qt.. water (12 Cups)
1 heaping TB. dried minced onion
8-10 med. potato's, peeled and cubed
1 C. grated cheddar cheese
2 cubes butter

Bring to a boil, bouillon cubes, water, parsley, minced onion, carrots,
and potato's until done.
In a different pan... melt butter, add flour and stir in half and half until creamy.
Add this to other mixture.. Simmer for 5 min, add cheese.
Best if made early AM for dinner

Pumpkin bread



This is the best pumpkin bread recipe with just the right amount of spices!

5 eggs well beaten
3 C. sugar
2 1/2 C. canned pumpkin
2 C. oil
4 1/2 C. flour
1 1/2 tsp. salt
1 1/2 tsp. baking soda
4 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
1 1/2 tsp. cloves
1 tsp ginger
1 1/4 C. milk chocolate chips (optional)
1/2 C. chopped pecans (I have never used)

Preheat oven to 350'. Grease and flour four 9x5 loaf pans.
Cream sugar and eggs. Add pumpkin and oil, mixing slightly.
Sift dry ing. together and add to pumpkin mixture: combine throughly.
... Fold in chocolate chips and nuts. Pour into loaf pans and bake for 45 min.
This recipe can easily be halved. Freezes well.

Twice Baked Potato's



Potato's wrapped in foil & baked in oven
Unwrap potato's
Cut potato's length wise
Scoop out middle and put in bowl
Add: sour cream, ranch( I use Costco), & milk ( just until it is the consistency you want)
Mash with a potato masher
Add and mix: Dry Minced onion or green onion, Garlic salt (I like california style), pepper to taste & grated sharp cheese
Fill potato skins
Put on cookie sheet
Bake at 350' until heated thru and cheese looks melted

I do this to taste, add a little and then keep adding until it is the right flavor for you.
The sharp cheese and ranch are the key, I have tried other cheeses and it is not the same. I add minced onion , Sam doesn't like anything crunchy so I put dry minced onion in everything. If you have any Questions feel free to ask

Yummy Homemade Rolls


3 eggs (Beat Well)
1 1/4 C. Hot tap water
1 tsp. Salt
1/2 C. Sugar
1/2 C. Butter (Melted)
Mix Together
Add: 2 TB. Yeast (I use SAF, it makes a difference)
Let sit for 10 minutes until diluted
Add: 4 C. Flour: stir after each cup
Set aside & let rise for 30 or 40 minutes

Dough will be sticky. Put on floured surface. Put a small amount of flour on top.
Don't knead! Don't over handle dough! This is IMPORTANT!!
Flatten with greased hands till dough is 3 quarters inch thick
Flour edge of glass. Cut out. Put pat of butter in middle of circle and fold in half.
You could also make butter horns if you wish.
Let rise until double (30 or 40 min)
Bake 350' for 15 min, or until golden brown.
